Jiffy Hamburger Stroganoff

Quick, Easy, Hearty… the Trail Boss’ favorite! This meal is sure to fill your belly in a jiffy.

This is the first recipe in our series of recipes taken from Trail Boss’s Cowboy Cookbook! This book contains recipes for traditional dishes prepared for cowboys working on the range. These recipes are nothing fancy. They are plain, wholesome and designed to satisfy the appetites of men who spent long hours in the saddle.

Stroganoff is a classic comfort food. If you’re a fan of beef & mushrooms, this is the dish for you!

Before cooking this recipe, please allow plenty of time for thawing your beef! We recommend thawing 1 of 2 ways. Beef thaws best in the refrigerator! For a pound of ground beef, we suggest at least 6 hours of defrost time. Second best option would be thawing in cold water. If your beef is vacuum sealed, you are probably safe to soak the package straight in the water. Otherwise, place your frozen beef in a sealed Ziploc bag for its defrost bath! Change the water out every 20-30 minutes until the meat is fully thawed.

This recipe is going to be quick and easy, but before getting into it, you should have a plan on how you’d like to serve this dish so that you can prepare the side at the same time. Stroganoff is often served on a bed of egg noodles, but other options include mashed potatoes, rice, bread, roasted potatoes or even sweet potatoes! The options are endless. But, whatever you choose, be sure to get the ingredients and start cooking it so it aligns with when your hamburger stroganoff will be done!

Now, we cook the Hamburger Stroganoff! First, we are going to cook the vegetables. Start by melting 4 TBSP of butter in a large skillet, then add in 8oz of sliced baby Bella mushrooms. Cook them a few minutes until they start to soften, then add in half of a large yellow onion (chopped). Continue to fry the vegetables together until they are fully cooked and the onions are transparent. Once you reach that point, add in 1 TBSP of minced garlic and cook an additional minute until the garlic is fragrant, then remove the vegetable mixture from the skillet and hold to the side in a bowl.

Now, you cook the beef! In the same skillet with a large drizzle of olive oil, cook your ground beef until it is fully browned and cooked through. About halfway through, season the beef with salt and pepper to taste.

Once your beef is cooked, add in one can of cream of mushroom soup. Mix the two ingredients until evenly combined, then add in the vegetable mixture and do the same. Once the ingredients are all mixed together, add in ½ C of shredded cheddar cheese and stir it all together. Cover your skillet with a lid and let the stroganoff simmer for 25 minutes.

*This is typically a good time to make your side dish if you haven’t already!*

At the end of the 25 minutes, add in 8 oz of sour cream & 2 TBSP of Worcestershire. Heat for about 2-3 minutes until the sour cream has started to melt in, and the stroganoff is hot through.

When serving, spoon your Jiffy Hamburger Stroganoff over the side dish of your choosing! We chose mashed potatoes! This dish isn’t one for the eyes, don’t be surprised when it doesn’t look super appetizing… but your belly will thank you for this delicious dinner!

Jiffy Hamburger Stroganoff

Defrost Time: ~6 hours in refrigerator

Preparation Time: 10-15 minutes

Cook Time: 25 minutes

Servings: 4

Ingredients:

  • 1 lb Hickok Hamburger ground beef
  • olive oil
  • salt & pepper to taste
  • 8 oz sliced baby Bella mushrooms
  • ½ large yellow onion (chopped)
  • 4 TBSP butter
  • 1 TBSP minced garlic
  • 1 can cream of mushroom soup
  • ½ C shredded cheddar cheese
  • 8 oz sour cream
  • 2 TBSP Worcestershire 

SIDE DISH OPTIONS: Egg noodles, mashed potatoes, rice, bread, roasted potatoes, sweet potatoes - whatever side you choose, make sure to get the ingredients needed!

Instructions:

  1. DEFROST MEAT - please make sure you leave enough time to defrost your ground beef completely before starting.
  2. In a large skillet, melt butter, then add in mushrooms. Cook until they begin to soften, then add in onion. Cook until vegetables are fully cooked, then add in minced garlic and cook an additional minute until garlic is fragrant - then remove vegetable mixture from the skillet and hold in a bowl to the side
  3. In the same skillet, with a large drizzle of olive oil, cook your ground beef. About halfway through cooking, add in salt and pepper to taste. Cook until meat is browned and fully cooked through.
  4. With the cooked beef still in the skillet, add in a can of cream of mushroom soup and mix until evenly combined. Then, add in the vegetable mixture, combine, then stir in your shredded cheddar cheese until the stroganoff is combined evenly.
  5. Cover your skillet with a lid and let the stroganoff simmer for 25 minutes.
  6. *This is typically a good time to cook your side dish!*
  7. After the 25 minutes, stir in sour cream and Worcestershire. Continue to heat for 2-3 minutes until the mixture is combined evenly and heated through.
  8. Serve your Jiffy Hamburger Stroganoff over the side dish of your choosing and ENJOY!
