Ground Beef & Sweet Potato Skillet

We love a one pot, quick dinner! Especially if it involves sweet potatoes!

This was our first time trying this recipe and we really loved it. It’s easy & fast - perfect for busy weeknight dinners!

Before cooking this recipe, please allow plenty of time for thawing your beef! We recommend thawing 1 of 2 ways. Beef thaws best in the refrigerator! For a pound of ground beef, we suggest at least 6 hours of defrost time. Second best option would be thawing in cold water. If your beef is vacuum sealed, you are probably safe to soak the package straight in the water. Otherwise, place your frozen beef in a sealed Ziploc bag for its defrost bath! Change the water out every 20-30 minutes until the meat is fully thawed.

Start by preparing your vegetables. Finely chop half an onion & cube 3 large sweet potatoes.

In a large skillet, heat a large drizzle of olive oil over medium/high heat. Add in your defrosted ground beef & chopped onion, then break up the beef. We just want to throw in that if you haven’t invested in a meat chopper utensil… you are really missing out! This thing breaks up the meat so well and so quickly - AND it’s only about $10 on Amazon. Here’s a link if you want to check it out! Once the beef is all broken up, stir in 1 TBSP (3 tsp) of chili powder, 1 tsp cumin, ½ tsp salt & ½ tsp black pepper. When the beef is nearly cooked through, add in the minced garlic and cook for another minute until fragrant. Pour the mixture out onto a plate and wipe out the skillet with paper towels in preparation for the next steps.

In the clean skillet, add diced sweet potatoes, fire roasted tomatoes, green chilis, water, 2 tsp chili powder & 2 tsp cumin. Stir everything together, cover with lid & simmer for about 25 minutes, or until sweet potatoes are tender to your liking. 

Add the ground beef & onion mixture back into the sweet potatoes & stir everything together. Top with shredded Mexican cheese (as much as your heart desires) and cover with the lid again for a minute or so to allow the cheese to melt. Serve topped with chopped cilantro & enjoy!

Defrost Time: ~6 hours in refrigerator

Preparation Time: 15 minutes

Cook Time: 30 minutes

Servings: 4

Ingredients:

  • 1 lb Hickok Hamburger ground beef
  • Olive Oil
  • 3 large sweet potatoes
  • Half a yellow onion
  • 5 tsp chili powder
  • 2 tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp minced garlic
  • 1 14.5oz can fire roasted tomatoes
  • 1 4oz can green chilis
  • ½ C water
  • Shredded Mexican Cheese (about 1 C)
  • Cilantro for garnish (optional)

Instructions:

  1. DEFROST MEAT - please make sure you leave enough time to defrost your ground beef completely before starting.
  2. Prep vegetables - chop onion & dice sweet potatoes
  3. In a large skillet, heat a drizzle of olive oil. Add in the ground beef and onion, then break the beef apart. 
  4. Once beef is broken, add in 1 TBSP chili powder, 1 tsp cumin, ½ tsp salt & ½ tsp pepper. Stir together evenly. 
  5. When the beef is almost done cooking, add in minced garlic and cook for another minute until the garlic is fragrant and the beef is fully cooked. Once cooked, remove the beef mixture & set it aside on a plate, then wipe out the skillet with paper towels.
  6. In the clean skillet, add the diced sweet potatoes, fire roasted tomatoes, green chilis, water, 2 tsp chili powder & 1 tsp cumin. Mix together then cover with a lid and let it simmer for 25 minutes, or until potatoes are tender to your liking. 
  7. Add the beef mixture back into the vegetable mixture and mix evenly. Heat for a minute or two so that the beef is reheated. 
  8. Cover the skillet with shredded mexican cheese (as much as your heart desires), then cover with the lid again for a minute or two to allow the cheese to melt. 
  9. Serve topped with chopped cilantro and ENJOY!
