Easy, Asian, At-Home & Healthy!

Living in small town, Texas, we don’t have Asian food ANYWHERE within a 30 mile radius. We came across this recipe in our new cookbook, The Ultimate Ground Beef Cookbook, Presented by American Farm Co. We were excited to find this new meal not only because it sounded like a delicious fill for our Asian craving, but it’s also healthy!

Before cooking this recipe, please allow plenty of time for thawing your beef! We recommend thawing 1 of 2 ways. Beef thaws best in the refrigerator! For a pound of ground beef, we suggest at least 6 hours of defrost time. Second best option would be thawing in cold water. If your beef is vacuum sealed, you are probably safe to soak the package straight in the water. Otherwise, place your frozen beef in a sealed Ziploc bag for its defrost bath! Change the water out every 20-30 minutes until the meat is fully thawed.

First we are going to cook the hamburger. Put your ground beef in a large skillet and cover with olive oil. Cook the meat over medium/high heat, breaking it up. After a minute or two, add in your seasonings (salt & pepper to taste). 

Once the beef is about finished cooking, add the diced onion, carrots & minced garlic. Continue cooking until the onion begins to soften and become transparent. 

Next, stir in the grated ginger, soy sauce & rice vinegar. Then, mix in the bag of coleslaw. Cover the pan & cook on low for 5 minutes until the slaw is soft.

Serve drizzled with sriracha if you like a little extra spice!

Defrost Time: ~6 hours in refrigerator

Preparation Time: 10 minutes

Cook Time: 15 minutes

Servings: 4

Ingredients:

  • 1 lb Hickok Hamburger ground beef
  • olive oil
  • salt & pepper to taste
  • ½ white or yellow onion, diced
  • 8oz coleslaw mix
  • 1 C shredded carrots
  • 1 TBSP minced garlic
  • 2 TBSP soy sauce (or coconut aminos)
  • 1 TBSP fresh ginger, grated
  • 1 TBSP rice vinegar
  • Sriracha to taste (if you want the spice)

Instructions:

  1. DEFROST MEAT - please make sure you leave enough time to defrost your ground beef completely before starting.
  2. Cook ground beef with olive oil in a large skillet over medium/high heat. After a few minutes, add in salt & black pepper to taste.
  3. Add in diced onion, shredded carrots & minced garlic. Cook until onions are soft and transparent.
  4. Stir in grated ginger, soy sauce & rice vinegar.
  5. Mix in the bag of coleslaw, then cover the pan and cook on low for 5 minutes until the slaw is soft.
  6. Serve with a drizzle of sriracha if you’d like some extra spice!
  7. ENJOY!
