Bowls & Nachos & Lettuce Wraps, Oh My!

This super simple, versatile dinner recipe is one of our favorites! If you love burritos, you will love this! With all the goodness of a burrito, you can enjoy burrito bowls, burrito nachos or burrito lettuce wraps! Heck, you can even do a plain old burrito! With this filling recipe, the options are endless!

Before cooking this recipe, please allow plenty of time for thawing your beef! We recommend thawing 1 of 2 ways. Beef thaws best in the refrigerator! For a pound of ground beef, we suggest at least 6 hours of defrost time. When making burgers, you want your beef completely thawed so it's easy to work with. Second best option would be thawing in cold water. If your beef is vacuum sealed, you are probably safe to soak the package straight in the water. Otherwise, place your frozen beef in a sealed Ziploc bag for its defrost bath! Change the water out every 20-30 minutes until the meat is fully thawed.

First, the easiest step that takes the longest! Make Spanish rice (according to the box).

Next, we prep all of our veggies. Finely chop one red bell pepper, one yellow bell pepper and half of a large white onion. Add all your chopped vegetables to a large skillet with a large splash of olive oil. Cook the veggies for a few minutes until the onion becomes translucent. Halfway through cooking, add in salt and pepper to taste. Once the vegetables are fully cooked, add in one (drained) can of corn & one (drained & rinsed) can of black beans. Heat for 1-2 minutes, then remove the mixture from the skillet and hold to the side in a large bowl!

Then we cook our Hickok Hamburger. Add your 1lb of ground beef to the same large skillet with another large splash of olive oil. Chop up until the meat is in pieces of your desired size. Add salt, pepper to taste, then continue cooking. Before the meat is fully cooked, add in your minced garlic & cook 1-2 minutes until fragrant. Once done, remove from the skillet and dump in the same large bowl as your bean & veggie mixture. 

Lastly, take your cooked Spanish rice and also add that to your meat, bean & veggie mixture. Mix these three components well until they are combined evenly.

To serve… there are many options and we LOVE. THEM. ALL! We really can’t choose a favorite, but with this deconstructed burrito mixture, you can make burritos, burrito nachos, burrito lettuce boats or burrito bowls! Whatever dish you choose, we suggest adding shredded Mexican cheese. Some other topping options are shredded lettuce, fresh avocado, sour cream, salsa, guacamole… Seriously, ENDLESS OPTIONS! Deconstructed Burritos

Burritos, Burrito Bowls, Burrito Nachos or Burrito Lettuce Wraps!

Defrost Time: ~6 hours in refrigerator

Preparation Time: 30 minutes

Cook Time: 25 minutes

Servings: 8

Ingredients:

  • 1 lb Hickok Hamburger ground beef
  • 1 TBSP minced garlic
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • ½ Large White Onion
  • 1 Can Black Beans
  • 1 Can Corn
  • Spanish Rice box - will need butter and 1 can of Rotel
  • Olive Oil
  • Salt & Pepper to taste

For Serving (optional):

  • Mexican Shredded Cheese
  • Fresh Avocado
  • Sour Cream
  • Guacamole
  • Salsa
  • Fresh Shredded Lettuce

Instructions:

  1. DEFROST MEAT - please make sure you leave enough time to defrost your ground beef completely before starting.
  2. Cook Spanish rice according to the box.
  3. Finely chop bell peppers & onions.
  4. In a large skillet, cook vegetables in a large splash of olive oil with salt & pepper to taste, then remove from the skillet & hold aside in a large bowl.
  5. Cook ground beef in the same large skillet with a large splash of olive oil. Halfway through cooking, season with salt & pepper to taste & add in minced garlic. Continue cooking until beef is fully cooked and garlic is fragrant. Then remove from the skillet and add to the large bowl holding vegetables. 
  6. Take cooked Spanish rice and add it to the large bowl with meat and veggies.
  7. Mix the three components until they are combined well.
  8. Serve either as burritos, burrito bowls, burrito nachos or burrito lettuce wraps. You can top your meal with shredded Mexican cheese, fresh avocado, fresh shredded lettuce, salsa, guacamole, and/or sour cream!
  9. ENJOY!
