For those of you who can't get over your love for the classic cheeseburger, this blog post is for you! We love trying new things and experimenting with our Hickok Hamburgers, but you can’t go wrong with a good, old-fashioned cheeseburger.

We’re calling this burger, the Classic Cheeseburger SMASH! 

This is our first time making a “smash” burger, but we loved the easy process and thought they made great patties for double & even triple meat burgers. For this recipe, you’ll need a special tool called a burger press. We used this cast iron Cuisinart Smashed Burger Press from Amazon!

Before cooking this recipe, please allow plenty of time for thawing your beef! We recommend thawing 1 of 2 ways. Beef thaws best in the refrigerator! For a pound of ground beef, we suggest at least 6 hours of defrost time. When making burgers, you want your beef completely thawed so it's easy to work with. Second best option would be thawing in cold water. If your beef is vacuum sealed, you are probably safe to soak the package straight in the water. Otherwise, place your frozen beef in a sealed Ziploc bag for its defrost bath! Change the water out every 20-30 minutes until the meat is fully thawed.

First, we make the patties! You’re going to want to start with smaller balls of ground beef for these burgers. When you smash the patties in the skillet, they will turn out pretty wide, so using less meat will control the size of the patties so that you can make these into double and triple meat burgers! If you’ve ever seen a smash burger at a restaurant, these patties are very thin! For this recipe, we suggest using ~1.5-2 lbs of Hickok Hamburger ground beef. This way, you’ll be sure to have enough meat to make as many patties as you’d like, at the size you’d like! Plus, if you end up with too much, a little leftovers never hurt anybody! Start by separating your meat into 3oz balls. Then you’re ready to start grilling.

For this particular recipe, we suggest making your patties in a skillet on the stove so that you have the ability to smash! Start by heating your skillet over medium/high heat for about a minute. Place your first ball on the skillet, cover with a piece of parchment paper, then smash it as thin as you can using your burger press. We suggest using parchment paper so the burger doesn’t stick to your press, but you can also grease the burger press if you prefer that method. Once your patty is cooking, season it with salt and pepper, then once you flip, season the other side as well! Typically we would give you internal temperatures to aim for according to your preferred doneness, but for a smash burger, typically if it looks cooked on both sides, it’s ready! Once your burgers are dark and crisped up on one side, flip your patty & place the cheese on to melt while the other side cooks. Make sure to give your buns a little toasting for that extra pizzazz. 

To build this classic hamburger, start with your toasted bun & spread on your condiments of choice. Next, place your cheesy patty (1, 2, or make it 3 patties!) on the bun and top with your favorite fixings. We like to go all out with fresh butter lettuce, thick sliced tomatoes, dill pickles, raw red onions, and maybe even a little bacon… YUM!

We always love a good crinkle fry pairing, seasoned with salt, pepper & cajun seasoning. Last but not least, to our Texas peeps, you can never go wrong with an ice cold Lone Star beer. If you're not a Texas resident... again, we're sorry you have to miss out on this Texas delicacy!

The Classic Cheeseburger SMASH

Defrost Time: ~6 hours in refrigerator

Preparation Time: 5 minutes

Cook Time: 15 minutes

Servings: 4

Ingredients:

Hamburger Patties:

  • 1.5-2 lbs Hickok Hamburger ground beef
  • salt & pepper to taste
  • 4 hamburger buns
  • 8 slices of cheese (of choice)

Fixings: all optional

  • Lettuce
  • Tomato
  • Red Onion
  • Pickles
  • Bacon
  • Condiments (of choice)

Instructions:

  1. DEFROST MEAT - please make sure you leave enough time to defrost your ground beef completely before starting.
  2. BURGERS: separate your beef into 3oz balls
  3. Heat stovetop to medium-high heat. Place the ball in a skillet, cover with parchment paper & smash with burger press. Season the patty with salt and pepper to taste. Once your burger has cooked for a few minutes, flip, season the other side with salt and pepper, and top with cheese to melt while cooking the other side of the burger.
  4. Toast the hamburger buns.
  5. Let the patties rest for 3-4 minutes before assembling.
  6. To assemble your Classic Cheeseburger SMASH, spread your condiments on both sides of your toasted bun, place your patty (or patties), then top with fixings.
  7. ENJOY!
